Join cheesemaker and food historian Eric Rector for a fascinating 90-minute journey through 12,000 years (~105 million hours) of cheese history. From ancient brined cheeses of the Mediterranean to Maine’s once-thriving dairy economy, Eric explores how geography, culture, and trade shaped the cheeses we know today. Learn how different cheeses are made—acid-set, rennet-set, fresh, aged—and what distinguishes them. Taste about 8 different cheeses along the way. Registration Cutoff: 9 July 2025, 1 PM Eastern Time.
